Kale Pasta Salad (Grain Free, Vegan)
New Recipe! This weekend I put together a kale salad I had never tried before using cassava orzo (which I had been meaning to test out) and it turned out amazing! The best part about this recipe, besides all the healing ingredients, is that you can put as much of each ingredient as you want! Enjoy! Kale Pasta Salad (Grain Free, Vegan)
Ingredients
1 box of “Jovial” cassava orzo (8 oz uncooked)
1 bunch of curly kale (about 6-7 stems)
1 pint cherry tomatoes
1/2 a red onion chopped however you like
1/2-3/4 cup of pitted kalamata olives chopped in half (I love the brand “Mina”—no vinegar!)
2 tbsp olive oil
1/2 cup fresh squeezed lemon juice
Salt to taste (I did about 1 tsp)
Instructions
Mix together dressing: olive oil, lemon juice and salt in a jar
Cook orzo on the stovetop according to package instructions. After it’s done cooking, drain and rinse the starches off.
Pour out cooked, rinsed orzo into small glass bowl and pour half of the lemon dressing over the top. Mix.
Wash and cut kale into bite sized pieces then add it into a separate large bowl. Pour the second half of the dressing on top of kale and massage until it becomes darker and more tender.
Add orzo (with dressing), kalamata olives (pitted and cut in half), and cherry tomatoes (cut in half) to the kale and mix altogether.
Eat right away or let it all chill and marinate together in the fridge for an hour before enjoying!
